Temperature is rising and the sun is finally coming out. The lesser days left until summer starts officially, the lesser I want to cook or eat heavy meals. So, I was hungry for light and fresh summer recipes, preferably those, which can I prepare very quick and easy. As I’m a big fan of canned beans, and always have some of them at home, I searched for light dishes with beans. Chilli is cool, but not really suited for a hot summer day. 😉
To get a fast recipe, which is perfect for busy weeknights or as to-go-snack, I created a nice salad. I aimed for a simple but satisfying one, which has the perfect balance between getting fed up and not getting supersaturated. The beans and feta make it quite hearty but with the tomatoes and herbs, it’s still light and fresh. It’s perfect as standalone or you use it as a side and combine it with some grilled fish or meat dish. Regardless of how you enjoy it, it will give you a real summer feeling. And the best about beans is, they have a high dose of fiber, taste delicious and there are so many different types of them. And through the cans, they are available nearly everywhere and last very long.
What You Need for a Bowl of White Bean Salad with Tomato and Feta
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon minced shallot
1 can white beans
2 cups cherry tomatoes
1 cup feta cheese
1/2 cup fresh parsley leaves
2 tablespoons fresh oregano leaves
Salt & Pepper
Get Started with your Salad
- Whisk the oil, vinegar, shallot, a big pinch of salt, and a few generous grinds of black pepper together in a bowl.
- Add the beans, tomatoes, feta, parsley, and oregano and toss to combine.
- Taste and add more salt and pepper as needed.
