First course: Beet and White Bean Salad

  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon sugar
  • 1/4 cup extra-virgin olive oil
  • 1 can whole beets, well drained and each cut in half
  • 1 can white kidney beans
  • 1/2 cup crumbled blue cheese
  • 1/2 cup coarsely chopped walnuts, toasted
  • Baby Arugula leaves
  • salt and ground pepper

Your family will love you for this! And here is the best on top: It’s so easy to prepare. Everybody can find these ingredients at home. First of all you have to create the dressing. It is so tasty – we would die for it! Take a small bowl and put in cider vinegar, Dijon mustard and ½ teaspoon sugar. Add some olive oil, salt and pepper and stir it well until it gets a creamy consistence.

Now it’s time for the big show of the canned beets and white beans. Put them into a big bowl and toss them with the dressing. To serve this nice starter, place arugula leaves on a pretty plate, top it with the beet-beans-mixture, and to make it unforgettable, sprinkle a handful of walnuts and crumbled blue cheese on top. Just wow!

Dessert: Peaches and Cream Cheesecake Bars

  • 1 cup almonds, finely chopped
  • 1 cup cracker crumbs
  • 1/3 cup unsalted butter, softened
  • 2 packages cream cheese, softened
  • 1 can sweetened condensed milk
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1/2 teaspoon almond extract
  • 2 1/2 tablespoons all-purpose flour
  • 1 can peaches, drained
  • pinch of salt

Okay, first and main course are great. But now get ready for heaven on earth! Preheat the oven to 190° C. Take a mixing bowl, combine almonds, cracker crumbs, and butter in it and stir it together. This will be the bottom of your cake. Press it into the pan. Next step is beating cream cheese with a hand blender until it is smooth. While mixing, add the condensed milk, eggs, lemon juice, almond extract, and flour. Don’t stop mixing until you have a smooth cream. After that spread this sweet cream of heaven on top of the crumbs bottom.

Yummy, yummy – it’s the peaches turn now! You have to blend them and mix them up with a pinch of salt. Use a tablespoon to drop the peach puree over the top of the cream mixture. Are you up to a fancy marbled look? Use a knife to swirl the peaches gently through the cream. Bake it for 30 minutes and then give the cake some time to chill in the refrigerator. Trust us: The waiting time will be worth it. This cake is like heaven!
