In my office, it’s pretty similar to many others I guess: When it’s your birthday, you have to bring a cake. Actually you get gifts on that special day, and of course there has to be cake, so someone has to prepare it. The easiest rule is that the birthday girl, or boy, has to bring it.. And in the end, you profit from it, too … everyone is in a good mood, work is more stress-free and the day is going to be quite a good one.

Here comes the problem: In the best case, the cake is homemade and I actually have no time due to work and sports in the evening. My solution after some research: The Coca Cola cake! It is not only delicious, but also super easy and fastly prepared.

What you need:

  • 2 Eggs
  • 350 ml Coke
  • 150 ml Vegetable Oil
  • 200 g Sugar
  • 500 g Flour
  • 1 Pack Vanilla Sugar
  • 3 tbsp Baking Powder
  • 2 tbsp Cocoa

   For the Icing

  • 50 g Butter
  • 1 tbsp Cocoa
  • 3 tbsp, heaped Powdered Sugar
  • 50 ml Coke

Let’s start baking!

Preheat your oven to 180 °C. Put the eggs, coke, vegetable oil and sugar in a bowl and stir them together. Add the remaining ingredients to the mixture and mix to a smooth dough. Grease a baking sheet, fill in the mixture and smooth it out. Put into the preheated oven for approximately 15 – 20 minutes. Remove the cake from the oven and poke holes into the warm cake with a wooden spoon. For the icing, warm all the ingredients in a pan and mix with each other. Spread with a brush onto the cake. If you like sprinkle the surface of the cake with grated coconut, nuts or whatever floats your boat.

The colleagues were delighted and I set the bar very high for the next birthday!
